- Par boil the rice sieve and set aside. Slice and cut ur onions, carrots, runner beans,green pepper, garlics and fresh tomatoes. Put ur cooking pot on fire! Add ur vegetable oil, the garlics, onions, fresh tomatoes and the tomato puree. Fry until the taste of the tomato puree doesn't slap the cheek again. Then add the chicken stock and allow it to simmer for 3 minutes. Add ur blended Scotch bonnet with crayfish. Add the Carrot, green pepper and the runner beans.
- . Spice it up, add some seasoning cubes and salt to taste. After that add the the rice, check the salt and adjust, check the water too and add more if necessary. Then cook until the rice is done with the water dried. And ur Jollof is ready!.
- Now for the pumpkin leaf. Wash and slice the leaves after selecting it. Slice ur onions (enough), 3 fresh tomatoes, 4 red pepper. Put the pot on fire! Add some vegetable oil (not much). Then add the onions followed by the fresh tomatoes and red pepper. Add some seasoning cubes. Fry for 3 minutes, lower the heat and add ur pumpkin leaf. Stir very well and turn off the heat! - Wash the chicken, spice it up with thyme, garlic, Rosemary, salt and seasoning cubes. Then bring it to boil for like 5 minutes.
- Separate the chicken from the stock and deep fry till it turned golden brown. After frying the chicken, put a clean pot on fire. Add some vegetable oil, add some onions and ur roughly blended red pepper. Spice it up and add some seasoning cubes. U can also add salt if u want (but salt is optional) Then allow it to simmer for 2 minutes, add the chicken and lower the heat. Cook for 5minutes and turn off the heat. Ur chicken on pepper sauce is ready!.
